A happy marriage between Calvados and freshly pressed apple juice rich in tannins, Pommeau combines power, sweetness and delicacy.

Varieties: BITTER-SWEET APPLES, MOSTLY BINET ROUGE

Pommeau is produced by combining Calvados with Appellation of Origin aged for at least one year and cider. The cider is the juice obtained immediately after pressing, before fermentation begins. The mixture is obtained by gradually adding eau-de-vie. The quantities of must and Calvados are calculated to achieve the desired alcoholic strength.
The pommeau is matured in fairly new oak barrels (used for 4 or 5 years and in which the tannins have not been completely exhausted), where it continues to age gently. It is bottled after about 30 months.

Serving suggestions
  • As an aperitif, serve cold, on its own. It goes well with melon, goose liver and blue cheese. For desserts, it goes well with apple or chocolate-based desserts.
  • Storage: ideally at 12°C.

Flavour description
Aspect: Mahogany, clean and shiny. Aroma: Strong and refined. Hints of plum, crystallised citrus, opening up to nutty aromas (almonds and hazelnuts). Taste: A supple and delicate attack. Good mouthfeel, long-lasting. Aromas of tart tart with hints of roasted hazelnuts. Very pleasant finish with caramel and cherries.
